The founder family

The founders

The first operation of the Familie Wiesner Gastronomie was founded in 1991 by Fredy and Anita Wiesner. Their goal was to use unconventional ideas to always take guests on a special culinary journey and amaze them.

2nd generation

Fredy and Anita have handed over the management of the company to their two sons in 2020 and will be on hand to offer advice and support. Daniel and Manuel now continue to lead the down-to-earth family business as Co-Lead Strategy & Innovation. Always convinced that beautiful experiences in good company are important and make happy. Together they formed a notorious defensive wall in the Zurich Oberland as right and left defenders over several football seasons in their 20s. Even then they were a strong team.

Fredy

Fredy Wiesner is the jack-of-all-trades, which was one of the pioneers in the 90s as a lateral entrant with novel concepts to change the Zurich gastronomic landscape sustainably. But his gastronomic history started early. Since the 70s, Fredy was in England as a pub barman deeply connected with the gastronomy. And a short time later he made his first independent up and down gastronomic experience. Little intimidated he threw himself in 1991 with the first sandwich own brand "Café Sandwich" in the roaring Swiss gastronomy world.

Later followed various takeaways such as the Mexican concept "La Salsa" and "Joey's oven-fresh pretzel & frozen yogurt" in the Zurich area. From 1997, the first Australian restaurant and bar "Outback Lodge" followed in Zurich, Winterthur and Uster.

Of course, this was not enough for Fredy. Worldwide travels inspired him again and again for new experiments, which he transferred to the Swiss market. Thus, in 2004 he founded the Asian chain "Nooch Asian Kitchen", in 2006 the sushi chain "Negishi Sushi Bar", in 2007 the South African "Mama Africa" and "Mama Chicken". With two discos he also ventured into nightlife for over 10 years and in 2015 he struck with his last big coup: the Peruvian "Papa Ceviche" was born and the burger chain "The Butcher" conquered German-speaking Switzerland.

.

Since January 2020, he has withdrawn from operational business. He continues to be chairman of the board of directors. His new passions are now nature-related projects such as planting vegetables in his own garden, collecting mushrooms and refining meat, as well as acquiring knowledge regarding electrosmog, earth radiation and water veins.

As a protective patron and forward thinker, he has laid a milestone for the enterprise. His wife Anita, who he married in 1982, has always been supportive. Together they have two sons, Daniel and Manuel.

Anita

Anita Wiesner is the guardian hand behind the Wiesner family. As Fredy's assistant in the first hour and person with the important advice, she has always helped to set the course of the family business. Day and night she stood by Fredy's side and helped to build a flourishing business from scratch.

Anita spent her time not only in the office in front of the computer, but also spread sandwiches together with Fredy in the early morning hours and stood countless hours at the cash registers in the various takeaways. Her cooking skills helped to ensure that the new recipes were always first developed in her own home kitchen and served to all private guests for a test meal.

Anita would not be herself if she had not also built up her own foothold alongside the catering business. She has been working as a body therapist since the early 90s and has been running her own practice "Body-in-balance" with a focus on atlaslogy and massages in Gutenswil ZH since 2009. In the gastro family business she is no longer operationally active since 2019, but is still available in an advisory capacity. If she is not twirling, she spends her time as a proud grandma with her grandchildren Gian and Ella.

Daniel

Daniel Wiesner likes it when a restaurant looks more unconventional than normal and also provokes once. He tried his hand at the family business during his childhood, first washing dishes and later also as a griller at a sausage and kebab stand and as a pretzel vendor.

His business studies at the University of Zurich helped make it possible for him to work in marketing as well as accounting in the gastronomy company in the mid-2000s. A two-year trip around the world then gave him the real kick. Thus, in 2009, he completely integrated himself into the family business and, among other things, continues Fredy's work in concept development with unconventional ideas. Since January 2020, he has been leading the gastronomic company as Co-Lead Strategy & Innovation together with his brother Manuel.
Daniel lives in the city of Zurich and is always looking for ideas all over the world thanks to the joy of traveling.

Manuel

Manuel Wiesner is the quiet thinker in the background for whom jogging in the mountains is a pleasure. He, aswell, grew up in the dishwashing areas of the restaurants and doing mental arithmetic while selling pretzels and ice cream together with Daniel. He had made the right decision for him to additionally gain his experience outside of the family business.

Manuel completed a commercial apprenticeship in the early 2000s and then trained as a fiduciary. After several stations in the fiduciary industry, he came back to the family business in 2013. With his accumulated knowledge as well as his innovative drive, he helped to turn the entire support office at the headquarters in Dübendorf around and build it up sustainably for the future. He has also been Co-Lead Strategy & Innovation since January 2020. For a long time he was on the road as a bike courier on the side and every mountain run helped him to keep up with the bike couriers +/-. Only he never liked the cold evenings.
Manuel lives in Uster and is married to Nadine. Together with their children Gian and Ella, they are always discovering the world through children's eyes.

Christmas tradition

Every year at Christmas, the Wiesner brothers Daniel and Manuel set out to visit all the teams of FWG restaurants to personally deliver gifts and wish them a Merry Christmas.
